Where from those 7 of Shigefusa Yanagiba Kitaeji

I have got the reply from Shigefusa side about 7 pieces of Yanagiba Kitaeji. The concave flat back side of engraved Shigefusa name are for Nihonbashi Kiya. I guess what all other retail shops have Shigefusa name engraving
on the front bevel side. I was told that it is sure what are made by Shigefusa (not fake), and it must be made before 1989. They were sold to a wholesale company and the wholesale company sold Shigefusa knives to Nihonbashi Kiya, but now, Nihonbashi Kiya buys directly from Shigefusa, and the wholesale company had closed the business, so they might be the old stock for the wholesale company, and they were sold to someone else when Nihonbashi Kiya started to buy Shigefusa knives straight from Shigefusa, or the wholesale company sold them someone else when they closed. That is all what I have got for the history of the seven of the Yanagiba Kitaeji.

Yoshikane Hankotsu Osaka boning knife

This knife is the one of my customer's custom knife to Yoshikane. I placed the order three of them, so I sell two of them this time. They had taken for 6 months, but it looks great, so I am happy with it. I guess it is originally used for fillet chicken or deboning chicken or some other meat. I
t does not have the heel, but it might be a great utility knife. It is boning knife, so it is thicker than the same length petty knife. Please click here to see extra pictures!

Shigefusa Yanagiba Kitaeji 270mm to 360mm arrived

I have got 7 of Shigefusa Yanagiba Kitaeji 270mm to 360mm blade. It looks originally from old stock of Nihonbashi Kiya which has been deal with Shigefusa for a long time. Nowadays, Shigefusa knife is engraved on "Registered Shigefusa made" on the front side, but those knives are engraved "Shigefusa Saku" on the backside of the blade. I made it for my friend. It can use for Shapton glass series and regular whetstones. It is used synthetic wood deck material, so it is heavy and water proof. Hopefully, it works well.

Shapton Glass Series whetstone is one of ideal artificial whetstones.


There is wide range of lower to higher grit whetstones like lower grit #120 grit to #30000 grit.

It is easy to keep on flat sharpening surface that is harder to be dented even though it is lower grit whetstone.

Shapton company invests lots of time and money to their research that makes great high technology products.

Shapton Glass Series is much easier to sharpen blades for us with trouble free compare with past artificial whetstones.

If I say one thing of negative side of problem with this series, it is little bit fragile, so if we hit the glass series whetstone on the hard corner or drop down to the floor, it might be chip the corner or broken.
Most whetstones are the same, so it is not too much problem from lots of positive side of the whetstone.

It makes good feeling when I sharpen the whetstone too.

Yoshikane Tamamoku Wagyto w/ V2, VG10, & White




Finally, we have got three types of Yoshikane Wagyuto Tamamoku 240mm V2, VG10, and White II steel Blade knife.

It has taken for over 6 months.

After earthquakes and Tsunami disaster in Tohoku, Japan, many blacksmiths has been close their business.
Japanese fisherman use Makiri knife often during fishing and fillet fish.

Those Makiri knives had been made those closed business blacksmiths, so there are lots of demand, but not enough supply, and Yoshikane was asked to make thousands of Makiri knives for fishermen, and they accepted to make them, so they had been so busy, and no time to make their own orders last several months.
I have heard that they are O.K. now what they are back in their business, and they can make own orders.
